Cashew Coconut Date Bliss Balls!

How can a recipe containing all great ingredients like crunchy cashew nuts, shredded coconut and yummy dates can be anything but delicious? This recipe combines all those simple ingredients creating a delicious mix of flavours and texture! It is really quick and easy to make, it will satisfy your sweet tooth and is a perfect nutrient packed and energising snack that you can bring on the go.

While these balls will give your taste buds an absolute blissful experience, you will feel great¬†knowing that they do not contain any refined sugar. The sweetness in it comes from the natural sugars in the dates, that’s all! Another great news is that these balls keep well in the fridge and can even be frozen for a later use, it helps when you have a busy schedule and like to plan ahead. It’s also a perfect favour to offer to your friends and family during special get together, they will be amazed to know what’s in. I love to play taste and guess, and see the look on their faces when they discover that it is actually good for them. No serious, I promise, it is all vegan (dairy and egg free), refined sugar free, there is no cooking, it’s raw, with only quality ingredients!! :) It’s now time to discover the recipe.

Ingredients:

1 cup of pitted dates (soaked)

5 tbsp of shredded coconut

5 tbsp of crushed cashew nuts

1 tbsp of coconut oil

1/2 tsp of vanilla extract (optional)

Pinch of Cinammon

Pinch of Salt

Topping of choice:

Shredded coconut

Raw cocoa powder

Raw cacao nibs

Crushed nuts

Soak the pitted dates in water for 2 hours. Then blend them until you achieve a smooth consistency.

Mix this date paste with the remaining ingredients until you get something that looks like a really sticky dough.

Chill in the refrigerator until cold (around 20 mins).

Take the mixture out of the refrigerator  get a tablespoon of it at a time and form small balls into the palms of your hands.

Coat them with your topping of choice.

Store them on a plate/rack in the refrigerator or freezer until you serve.
