Flower Power Pops!

Summer is way behind us, but sometimes it feels good to get some summer vibe back in our life! That’s why today I chose to share a colourful and summery ice pop post. The recipe I will be sharing is really fun to make and even more fun to eat. It is also a nice creative activity to do if you have young kids. I can still personally remember how impatient I was, as a child, to devour my frozen creations. Involving your little ones when preparing healthy snacks is a great way to make them connect that image of fresh whole food with fun and happy moments! Think in colour, texture and flavour to create a memorable experience.

These Flower Power Ice pops are not only fun to make, but also really pretty. You can think of serving them at a garden or floral themed party or anything calling for a feminine and colourful touch.

Flower Power Ice Pops Recipe

 

Ingredients: (makes around 6-8 pops)

– 1 green coconut (buko)

– 20 calamansi(s)

– 1 handful of edible flower

I get my edible flowers from “down to earth” in the Sunday market in Legaspi. They have some pretty, ready-to-eat assortments!

Directions:

Chop the coconut and collect the water. Juice the calamansi. Mix the coconut water and calamansi juice and pour the mix into the ice pop maker. End with adding the flowers. Freeze for 24h and enjoy!
