Fresh Summer Rolls with Zesty Dark Sauce

A super loved recipe of mine is this fresh summer rolls and zesty dark sauce, made out of simple ingredients, widely available in Manila. It is fresh and colourful, slightly creamy, with a powerful kick once dipped into the sauce. I could probably eat this every single day of my life. Should I move to Vietnam, doctor? The great part about it is that it doesn’t require any cooking, the preparation is pretty fast and straightforward. All it takes is to chop the vegetables and to wrap them like a burrito, yep that’s it! Another great news is that these rolls are a great way to intake raw vegetables into one’s diet. Raw vegetables are contributing greatly to good health since they are rich in phytonutrients, enzymes and antioxydants. For those of you on a way to a healthier lifestyle, this recipe is a must try!

Ingredients: (for 12 sheets)

Rolls:

12 Rice Paper Rolls Sheets

12 Lettuce Leaves (kept whole)

2 Carrots (julienned)

1 Small Purple Cabbage (Chopped)

1 Cucumber (julienned)

1 Radish or Tunip (julienned)

1 Avocado (sliced into thick strips)

Herbs: Basil, Mint or Cilantro

Crushed Nuts for added crunch (optional), don’t forget to soak them first!

 

Dipping Sauce:

4 Tbsp. Coconut Aminos

2 Tbsp. Coco Cider Vinegar

3 Tbsp. Coco Sugar

2 Tbsp. Calamansi Juice

2 Tbsp. Toasted Sesame Oil

1 Tsp. of Sesame Seeds

1/2 Tsp. Chili Powder

Directions:

Sauce:

Just mix all ingredients together

Rolls:

Submerge the rice paper sheet in a plate containing water for a few second until it becomes moistened.

Lay the moistened sheet on your work surface and horizontally place the filling ingredients in the lower part of the sheet.

Pull up the bottom flap of the rice paper, making sure you go over the filling and give it a full roll. Then, fold in the side flaps and after that, roll everything up to close. Don’t worry if you mess it up, it will take a few sheets to get the hand of it. It doesn’t have to be perfect to be super yummy anyway! ;)

Cut the roll in the middle if you wish. Serve with the sauce and enjoy nature’s vibrant kick!
