Pumpkin Spice Chia Pudding

It’s October and everything is about pumpkin, right? I love how versatile pumpkins are, they are a great addition to a savoury dish such as a tajine, a gratin or a soup but also blend perfectly into a sweet treat or desert. My latest creation of the season is on the sweet side: a pumpkin pudding! It is a creamy, hearty and filling pudding that tastes like pumpkin pie and is really enjoyable for breakfast or merienda. This recipe is really easy and if you are new to cooking you should definitely give it a try, it won’t fail!

 

 Pumpkin Spice Chia Pudding Recipe

 

Ingredients:

  • 1 cup of pumpkin cut into pieces
  • 2 tbsp chia seeds
  • 1 cup of coconut milk
  • 1 tsp pumpkin spice
  • 1 vanilla bean (scraped)  or 1/2 teaspoon of vanilla extract
  • 1 tbsp coconut nectar

Direction:

Flavour the coconut milk by adding the scraped vanilla bean, coconut nectar and pumpkin spices. Mix well.

Mix the chia seeds and the flavoured milk in a glass jar and keep in the fridge overnight.

Prepare a pumpkin puree by boiling and blending the pumpkin. Add the pumpkin puree to the Chia pudding and enjoy!

Tip!

1) Make your own Pumpkin spice by mixing together 4 teaspoons of cinnamon, 2 teaspoon of ginger, 1 teaspoon of nutmeg, 1 teaspoon of cloves.

2) Mix the Pumpkin puree when it is still slightly hot, it tastes even better :)
